When planning a trip to Torres del Paine National Park, a visit to the Pionero Bar in Hotel Las Torres is a must, as their menu is complete with unique cocktails, recycled glassware and sustainable copper straws. With the magnificence of the mountains as a backdrop, you can enjoy delicious drinks with an unbeatable view.

What is sustainable bartending?

In line with the concerns of travelers to protect the environment and seek sustainable products and services, sustainable cocktails are produced, presented and prepared with natural produce and reused materials. The result is a highly positive environmental impact, seasoned with a dash of creativity and innovation.

Other sustainable characteristics are that all related actions must help to conserve the environment, last over time and leave a legacy for future generations. This is precisely the philosophy that Las Torres Reserve has been practicing for many years, reducing their carbon footprint, and offering innovative sustainable mixology using ancestral techniques.

A Sustainable Cocktail Bar

Twelve years ago the renowned bartender, Federico Gil, arrived in Patagonia, captivated by the pure nature and a desire to generate signature cocktails that respect the environment.

After eleven seasons at Hotel Las Torres, Federicio has created a unique drinks menu for Bar Pionero and has won many international awards, using fresh, organic produce from the kitchen garden.

In addition to the handcrafted and ecological drinks offering, the bar also has a philosophy of  no single-use plastics:

“We produce our own glass cups from recycled bottles and we have replaced plastic straws for copper straws that are sanitized and reusable. These are important steps towards sustainability”, according to Gil.

The signature drinks you can try

One of the most unusual cocktails on the menu is the “Aborigen”, mixed with double distilled Capel pisco, bitter, rhubarb and a mix of teas, lemon balm, wormwood syrup, among other plants grown in the organic garden.

Rusty Wild is characterized by the use of frozen Patagonian stones with Glenlivet 12 year old whisky and handcrafted shaved ice made from glacial water.

El Hornero is an extraordinary cocktail served in a clay pot, made from chardonnay wine, homemade honey and trakal cooked in a clay oven.

Tierra Paine Gin is one of the new creations from Bar Pionero. It features 18 botanicals, endemic plants and plants from the Hotel´s organic garden. Its unique distilling process uses elements such as clay and the refreshing glacial water from Mount Cerro Paine.

And the Pioneer Beer is not to be missed. Las Torres is the only place in Torres del Paine National Park that brews its own craft beer, with water from the glaciers and hops grown in the organic garden. All organic waste from the brewing is used to generate compost that is worked back into the soil in the garden.
